One of my personal New Years’ Resolutions was to eat clean. I wanted to know everything that was going into my body.

I consider myself a pretty healthy eater but I have a love

for naughty fried food, chocolate, and wine.

It needed to change.

I started by going on the South Beach phase 1 for 3 weeks.

No sugar, no carbs.

My body adjusted itself so I no longer craved processed and sugar-laden foods.

Once I felt I was on the right track and all the toxins were out, I began to eat clean.

It is pretty simple if you think about it.

When you Eat Clean you eatthe way nature intended us to eat:

clean, fresh, tasty whole foods in moderation throughout the day.

(OK I cheat on the weekend with wine…shhhh…)

Eating Clean is a way of life, no calorie counting, no pills, no points,

just good healthy food.

It’s funny, we went out to eat last weekend for the first time since the new year.
I was so excited to not cook and eat somewhere other than our kitchen.

You know what?

It didn’t even taste that good.

I was pretty disappointed butit was agreat sign to knowmy body has accepted eating in a clean fashion.

So where am I going with all of this you ask?

I had to come up with healthier versions of some of my recipes.

I ran across Skinny Taste

the other day when looking for a low-fat version of Chicken Enchilada soup. I clicked over to her site and couldn’t stop clicking from one recipe to the next.

Here is my soup, oh it was so good!

I wanted to show youa little trick.

My soup is the one on top, you can see it is a little thicker than her soup on the bottom, just a personal preference. Instead of adding heavy cream I simply added evaporated milk to thicken it up.

Crock Pot Chicken Enchilada Soup

Servings: 6 • Serving Size: 1 1/2 cups + cheese • Old Points: 5 pts • Points+: 7 pts

Calories: 260.9 • Fat: 6.6 g • Protein: 25.4 g • Carb: 29.9 g • Fiber: 6.7 g • Sugar: 4.1 g

Sodium: 572 mg (without salt)

Ingredients:

2 tsp olive oil

1/2 cup onion, chopped

3 cloves garlic, minced

3 cups low sodium fat-free chicken broth

8 oz can tomato sauce

1-2 tsp chipotle chili in adobo sauce (or more to taste)

1/4 cup chopped cilantro (plus more for garnish)

15 oz can black beans, rinsed and drained

14.5 oz can petite diced tomatoes

2 cups frozen corn

1 tsp cumin

1/2 tsp dried oregano

2 8 oz skinless chicken breasts (16 oz total)

1/4 cup chopped scallions, for topping

3/4 cup shredded reduced-fat cheddar cheese

fat-free sour cream (optional)

Directions:

Heat oil in a saucepan over medium-low heat. Add onion and garlic and sauté until soft, 3-4 minutes. Slowly add the chicken broth, tomato sauce, and chipotle adobo sauce and bring to a boil. Add cilantro and remove from heat. Pour into crockpot.

To the crockpot, add drained beans, diced tomatoes, corn, cumin, and oregano and stir. Add the chicken breasts; cover and cook on low heat for 4-6 hours.

Remove chicken and shred with two forks. Add chicken back into the soup, and adjust salt and cumin to taste. Serve in bowls and top with fat-free sour cream, cheese, scallions, and cilantro. You can also top with avocado or crushed tortilla chips.

  4. There are organic wines out there without sulfites, also – you could try mead, it's wine made from honey. Mead is easy enough to make yourself and then you know exactly what is in it. You can also add cut up fresh fruit if you would like flavored mead.

  6. Yes – trying to eat healthier, but giving up wine – OUCH! My little gift to myself in the evening – heck somedays it's a BIG gift.
    A friend of mine emailed the skinny taste link to me today – there are lots of yummy looking healthy options there.

    Eating clean is a good way to look at it!

  9. Great job, Kristin! I too am a clean eater, and have been since my cancer diagnosis almost 3 years ago. I am cancer free now, and I intend to stay that way. Nutrition plays a key role in our health, and after my extensive reading during my treatment and chemo, I vowed to heal my body and prevent any future disease with a mostly plant based whole foods diet. I also juice, and exercise regularly. I still eat small amounts of animal protein, but make sure that it is organic, grass fed, and hormone free.
    I feel so much better knowing what I am putting into my body is the best I can find.
    Still love my wine and chocolate as well! Hey, you gotta live!

  10. How inspiring you are Kristin, to be taking such great care of your insides! I'm still doing the "sugar" BAD!

    I love the idea of using evaporated milk instead of cream, The receipe sounds wonderful! I have one to share with you sweet potato soup, no cream. I use apple juice, it's a keeper! 🙂

  13. This looks delicious, Kristin. I basically try to be a very healthy eater. My downfall is ice cream. Moderation, right? I know my hubby will love this soup so that may be our dinner this evening. I'll have to pop over to Yummy Mummy. The photo of the sparkling brie bite has my mouth watering. Happy Sunday to you!

  14. Great post Kristin! We are following a low carb, high protein and more fruits and veggies diet right now. (not a lot of the sugary fruits though) the first week was brutal because I am such a carbaholic, but now I feel great- so much less bloat and tummy fat, and definitely eating a lot cleaner. Red wine every night now 🙂 thanks for the links to the sites!
